The Wizard's Cauldron is a member of the Organic
Trade Association (OTA). This is a national association representing
the organic industry in Canada, the United States and Mexico. Members
include growers, shippers, processors, certifiers, farmer associations,
brokers, consultants, distributors and retailers. Established in 1985
as the Organic Foods Production Association of North America, the Organic
Trade Association works to promote organic products in the marketplace
and to protect the integrity of organic standards.
The Wizard's Cauldron produces products that are
compliant with the new USDA Organic standards. The U.S. Department of
Agriculture has put in place a set of national standards that food labeled "organic"
must meet, whether it is grown in the United States or imported from other
countries. After October 21, 2002, when you buy food labeled "organic," you
can be sure that it was produced using the highest organic production
and handling standards in the world.
The Wizard's Cauldron searches the world for the
finest organic ingredients obtainable. In many cases the Wizard actually
travels, visits and inspects the facilities and meets the artisans that
product these exceptional ingredients. Di Nigris is an example of such
a vendor. They are an authentic producer of organic Balsamic vinegar
in Modena Italy. Founded in 1889, the Italian Company has specialized
in the production of very high quality wine vinegar for three generations,
including the Balsamic Vinegar of Modena, in which segment "De Nigris" is
a world leader.
The glass that the Cauldron uses to bottle their
offerings is important, too. Using glass that is clear, clean, and stored
in sanitary conditions is paramount in offering a quality product. Just
like food, glass made freshly make a difference. The Cauldron uses only
glass that meets very high quality standards and our friends at Leone
supply some of the finest and cleanest glass bottles in the world.
Another organic farmer who is a friend and supplier
of the Cauldron is Neal Norman. He grows pungent organic ginger in the
dark, rich volcanic soils of Hawaii. Nestled on the North Shore of Kauai;
the ginger farm basks in rich tropical sunshine and absorbs the cleanest
water on Earth. There is no better ginger in the world. He has invited
the Organic Taste Wizard to the organic ginger fields where they both
put their hands into the fertile organic soil and savored the magic of
organic agriculture.

Enjoying a leadership team that has decades of experience in the organic

The American Institute of Baking is a not-for-profit
corporation, founded by the North American wholesale and retail baking
industries in 1919 as a technology transfer center for bakers and food
processors. The original mission of the organization was to "put science to work for the baker," and
that basic theme is still central to all of the programs, products, and
services provided by AIB to baking and general food production industries
worldwide. AIB's staff includes experts in the fields of baking production;
research related to experimental baking, cereal science, and nutrition;
food safety and hygiene; occupational safety; and maintenance engineering.

facility.
